When making cauliflower rice I usually pull out my cuisinart and grate the cauliflower in large batches, making enough for the meal I am cooking and some to freeze for later use.
Brussel Sprouts with Red Peppers and Almonds
Please note if you don’t have a large skillet you could just as easily roast these items in the oven at 400 degrees for about 30 minutes, stirring once or twice as they cook.
Patriotic Potato Salad
Switch out the blue potatoes and make it on any day other than the 4th and call it what you like:)
Paleo Pico De Gallo
If you just don’t have the time or patience throw it all in a food processor, but I promise, it just won’t taste the same.
Sweet Potato Pesto Style
I’ve been enjoying a bountiful basil harvest and made some pesto this week. It immediately struck me that the nutty pesto flavors would make a nice partnership with some roasted sweet potatoes.
Roasted Jalapeño Baba Ganoush
Remove jalapenos and remove stem of one, Add the ENTIRE Jalapeno to the same bowl/blender. If you prefer split it open and remove the veins and seeds for less spice....
Carrot Leek Soup
Clean carrots and add to leeks and butter. I usually just break my carrots in half and cook them in large pieces...
Like success with any healthy eating- plan and pack your meals. It’s not easy to find “paleo” options on the fly every where you go.
Brussl Sprout Chips
Brussl Sprout Chips
Earthy Carrot and Red Pepper Soup
After soup has finished cooking use an immersion blender to puree all of the vegetables into a smooth consistency. You may find the soup a bit thick, if so add more chicken stock to thin it
Chai Spice Infused Beets
I roast them, I sautee them, I set my microwave on fire cooking them(no joke unfortunately…), and now….. NOW, I can them!
Clementine Green Beans
This recipe is one of the first I crafted. It’s my favorite and I just might make it a regular dish year round, subbing whatever citrus happens to be readily available at the time…
Grass-Fed Beef and Lamb, Wild-Caught Seafood, Free-Range Chicken, and Pastured Pork
Sweet Potato Sides
This morning I baked up several sweet potatoes when making the kiddos breakfast and then quickly played a game of hot potato, sweet potato when I peeled them… Next time I will just let them cool when I load the troops on the bus.
Roasted Rosemary Root Vegetables
This is a super easy, super straightforward dish. It is a very impressive looking and tasting side. It can be cooked ahead and reheated.
Kale Stuffed Portabello Mushrooms
This ended up being a vegetarian friendly recipe but could easily be a main dish for carnivores if you added bacon, ground meat, etc.
Brussel Sprouts and Grapes
Last summer I made a savory recipe with grapes and it was amazing so I decided to try roasting these with the sprouts, and…. They were awesome!!!
Easy ground beef recipe: Paleo Keema Mattar
Tonight I made Keema Mattar over cauliflower rice and although it wasn’t what I envisioned, it was darn tasty!
Chicken Sausage and Sauerkraut
This is just a quick post on an easy go to lunch, something we keep in our fridge on almost all occasions
Make Your Own Beef Jerky
Always have something around that’s paleo friendly to grab in a bind. Plan to Succeed.
Beef Butternut Squash Stew
If you have the time and desire you can pre brown the stew meat but I don’t find it makes that big a difference. Of course I’m a busy mom trying to do it all so I might not notice the finer nuances in flavor searing might offer stew meat…
Kale Omelette with Avocado and Tomatoes
I plated this big boy omelette, topped it with chili verde salsa, an entire avocado and chopped tomatoes and downed it with a big cup of coffee with coconut milk.
Fiesta Egg Salad
I just harvested some cilantro from our garden this morning and wanted to use it. I made what I’m calling a Fiesta Egg Salad and ate every last bite!!!
You've got to have a slow cooker!

Pecan Crusted Paleo Scallops
Either chop the butter up in to tiny pieces and spread them evenly across the scallops or take the easy route like me and microwave it to melt
Paleo Seafood Fra Diavolo
Today I really wanted to make something different for dinner. I wanted a tasty treat, and I didn’t want to spend an arm and a leg on anything. I knew that I had some frozen shrimp in the freezer and thought it would be a good idea to use them.
Collard Greens and Paleo Sweet Potato Turkey Burritos
Peel and chop 1-2 two sweet potatoes and start them boiling in some water. Boil them until tender to the bite but not to mushy. If you’re in a hurry like I was today you can throw them in a bowl with a little water, cover and microwave for 6-8 minutes to save time.
Paleo Chuck Pot Roast
This is the second time I have made a pot roast in the morning(a few months ago I somehow bought one, brought it inside, and set it down on the couch only to forget about it for the next couple of hours- still not sure how that happened. I crock potted it overnight after searing it and it turned in to one Happy Accident) and I have to say, it’s becoming a breakfast fave!!!
I served ours with bacon but this would be a hearty breakfast just as is too.
Paleo Pulled Pork
Pull the pork in the crock allowing it to sit in the sauce until cooled and put away (The meat will fall apart with a simple stab of the fork)
Chinese Chicken Stir Fry
Clean and chop all of your vegetables. I cut the book chow and carrots on a diagonal, the cabbage into thin strips, the broccoli in to small florets. the bell pepper in to strips and the green onions from the white part up through the green stems.
Paleo Pasta and Clams
Combine everything on a large platter and have at it. Our kids love clams and serving themselves off of a big communal plate.
Turkey Sliders Turned Stir Fry
Serve this mixture over kale, in steamed collard greens, on lettuce boats or just eat it out of the glass container you store the leftovers in. The choice is yours…
King Crab Legs
Have you ever found yourself struggling with something and decided to back off and look at it from a new perspective?

Paleo Poblano Poppers
Wwhile these peppers won’t “pop”into your mouth in one bite, they could theoretically be finger food and were oh so tasty!!!
Paleo Roast a Chicken
Roast a chicken. Get a whole fryer from the grocery store (stock up on multiples when they’re on sale and freeze them), then roast away. It’s easy, it’s inexpensive and it’s really quite delicious.
How to Make Bacon
Recommendations on how to cook bacon, how to save the grease, how to store it all vary. You can bake it, you can fry it up fast, you can fry it up slow, you can even microwave it
Slow Roasting Eye of Round
Today’s tip is see your opportunities. Opportunities to use up produce past it’s prime in soups or casseroles or stir fry. Opportunity to throw dinner in the crockpot when you have a few moments early in the day.
Paleo Beef Stew Recipe
You don’t need to reinvent the wheel, sometimes you just need to pull it out and clean it off. Sometimes you can jazz it up. And sometimes you can build a new one, but at the end of the day it’s still a wheel.
Paleo Fried Chicken
Served up hot next to mashed cauliflower with my take on paleo chicken gravy (pan drippings mixed with some chicken stock, salt and pepper, brought to a boil, then boiled and stirred until reduced- there was so much fat in the pan it didn’t require a thickener) and sauteed beets and greens, it was delicious.
Life is good. One reason is…. Chili makes me happy!
I always cook mine in the morning then simmer it in the crockpot for the day to really steep the flavor but if you’re in a time crunch you can make it and eat it right away too.
I made an 11 egg frittata, and it was good. If you have a full dozen, feel free to use them, I don’t think it will make or break the recipe.
Lovely Lamb(and Pork) Meat Loaf
One of the first things I made when we got home from Florida a week and a half ago was this lovely meatloaf of pork, lamb and pistachios. I baked it alongside a couple of acorn and carnival squash, sauteed up some broccolini, and totally relaxed into good food and a dinner at home upon sitting down at the table.
Taking stock mentally, spiritually and physically.
