I baked this loaf during the weekend and portioned it accordingly for my week’s breakfast & snacks. What a way to get some greens (from the zucchini), nuts (from the almond meal) and some dried fruit (cranberries) into your body!

We posted a coconut paleo breakfast oats recipe previously. But recently I have experimented on a new “oat” recipe using cauliflower rice. Serve it with fresh berries and it’s amazingly good.

Slow Cooker Tomato Beef Short Ribs
If you have a busy weekend, this meal preparation is by far one of the easiest and most delicious meal. I prepared this meal in 15 minutes and then left it marinated overnight in the fridge. Popped it into the slow cooker the next day, went out to have fun and come home just in time for a warm scrumptious paleo dinner.
Chicken “Sandwich” Stuffed with Chorizo, Spinach, Onions and Basil Pesto
I have been sick of having salads for the past week and really feel like being a little bit more adventurous this week. I was going through #paleo in Instagram and came across a chicken ballotine recipe. Rolling up chicken butterfly chicken breast with cling wraps stuffed with whatever you want didn’t sound too hard for me. So I attempted, and failed. I still managed to save my chicken ballotine and turned it into a “Sesame Crusted Chicken Sandwich Stuffed with Chorizo, Onions, Spinach and Basil Pesto”. And it didn’t taste too bad either! You can always substitute your stuffings with other stuffs such as pumpkin puree or avocado to replace the basil pesto, mince beef to replace chorizo, and rocket to replace spinach.

Felt like having a savoury brunch one Saturday. Was craving gourmet sausages. Rummaged through my pantry and I came up with this brilliant and simple dish – Chorizo and spinach frittata (perfecto!). Trust me, you will WANT to make this again and again. OK. I shall not digress further, here is the recipe!

If you love COCONUT, this recipe is for you! Chicken tenders dipped in coconut milk, coated with coconut flour, cooked with coconut oil, dressed in shredded coconut! Absolutely divine! Drizzle some lime for the tangy zest and you are good to go. Enjoy :)
