Paleo Scalloped Vegetables
Thanksgiving weekend my parents were coming up for dinner. My mom loves to be the cook and doesn’t always take well to others cooking for her. For Easter dinner she insisted on preparing a ham and put me in charge of the main vegetable dish. She actually requested I make scalloped potatoes. My parents are a bit older (pushing late 70′s / early 80′s) so I know exactly what my mom expects to be eating. I have decided to try an experiment and see how well a paleo side dish goes over instead. The quest is to make something similar to scalloped potatoes.

Carrot Zucchini Bars
Over the last 15 years or so I seemed to have developed the horrible habit of skipping breakfast. When I first discovered Crossfit, The Zone and Paleo living it was one of the first of a host of important and wise nutritional advice I was given -START eating it!!! I then came to realize that breakfast didn’t have to be defined by certain “breakfast” foods. First thing in the morning I can now be found eating last night’s dinner leftovers, or other foods most people would think strange to start the day with. I now know better. For me, breakfast has to be fast as I am usually rushed to get to work and begin completing a million of the tasks that I will never actually get caught up with I saw this recipe in an old Performance Menu issue and thought that bars would be an easy to transport snack, and decided to give them a try.I doubled the recipe below and it fit nicely into a rectangular cake pan. I was able to make 1.5 dozen squares that are about the size of half of the palm of my hand. You could easily squeeze out 2 dozen if you wanted to make the bars a bit smaller.

Spicy Tomato Soup and Grilled Chicken
Soup Ingredients:
1 tbs olive oil
1 tbs butter
1 large white onion, minced
1 clove garlic, minced
3 cups gluten free chicken broth
28 oz canned diced tomatoes
1 tbs thyme
1 tbs basil
1 tbs pepper
1 tbs red chili flakes
salt to taste
Soup Instructions:
Heat the oil and butter in a large soup pot over medium. When melted, add the garlic and onion. Saute until translucent, but not browned. Add all the other ingredients and bring to a boil. Cook on low for at least 30 minutes, but you can let it simmer for over an hour. After 30 minutes, put half the soup in your food processor, and blend until smooth. (I say half, because I like the larger chunks of tomato in my soup, put it all in if you like it to be completely smooth). Return to pot and serve.
Spicy Grilled Chicken Ingredients:
2 lbs chicken breast tenderloins
juice of 1 lemon
1 tbs paprika
1 tbs olive oil
1 tbs tabasco
3 cloves garlic, minced
1/2 tsp black pepper
1 tsp red chili flakes
1/2 tsp salt
Combine all marinade ingredients, and pour into a gallon sized ziplock bag, over the chicken. Marinate at room temperature for an hour, or up to 12 hours in the fridge. Grill over medium heat, about 5 minutes on each side, or until no longer pink.
I served this along with a simple green salad. A really nice light meal with a lot of kick to it.

Paleo Sheppard's Pie
I love Shepard’s pie and this recipe is great. I love the use of pumpkin and sweet potato which is not only better for you but much more flavourful than white potatoes. Very hearty meal and makes great leftovers.

Coconut Curry Chicken

I have to say that my vegetable replacements of cauliflower and spaghetti squash are so amazing, that I don’t even miss the old crappy grains. I like this dish in the fall/winter on a cold day. But hey! It’s easy and good anytime. :)

Pork and Chicken with Peaches and Apples
This was a super easy and very yummy dinner. One of the yummiest of the season I would say. I am super thrilled because the last few times I have cooked pork tenderloin I thought it was boring. In fact, this tenderloin sat in my freezer for quite sometime as I wasn’t really looking forward to eating it. Not this time!!! I was inspired by my Jamaican grandmother. She had a certain spice mix that she used to use on the Christmas turkey every year – even passed the tradition on to my mom who did it for years and years. Now it’s my turn, and I have found it not only tasty on turkey, but chicken, and pork as well.
