Fiery Sweet Dumpling Chili
This chili is a bowl full of warmth and comfort. Grass-fed beef and pork chops are great the first night if you cook it right, but as leftovers, they can be very tough and chewy. I decided to take my leftover thanksgiving decorations – the sweet dumpling squash which is similar to acorn squash – and combine it with diced leftover beef to make a delicious chili. The chipotle in here makes it pretty spicy, so I toned it down a bit with a little coconut milk. Feel free to reduce the chipotle to 1 TBS.
Slow Cooker Pork Carnitas
Pork Carnitas
2 1/2 lbs pork shoulder
1 c. water
1/4 c. rendered animal fat or butter
1 T tomato paste
1 t cayenne pepper
1 t sea salt
1 clove garlic
1/4 c. apple cider vinegar
1 t paprika
1 t cilantro
1 onion, chopped
Cut pork into 2-inch chunks. Combine with all other ingredients in slow cooker on high for 3-4 hours.
Preheat oven to Broil setting. Spoon meat into a baking dish.
Broil for 10 minutes. Devour plain or with salsa and sour cream.

Why the hell am I spending $6 for a teeny tiny bag of something I can make myself?! Sadly, though, I now cannot eat plain kale chips ever again. This recipe has ruined me :)
