I get so excited when our lamb is finally “ready” and in my freezer. It doesn’t take long before it’s completely gone. Ground lamb is very versatile and makes great sausage and meatballs. This dish is wonderful for breakfast but also would make a great lunch or dinner, as it’s not spiced specifically with breakfast in mind. It’s bursting with herb and pepper flavor, and has just a tiny kick from the cayenne. It goes really well with the delicata squash.
Oh how I love Greek food, or the Americanized version of what I think Greek food should be. Gyros are amazing, with their perfectly sliced meat, warm pita bread, and oozing with tzatziki sauce, yum! But pita bread and a yogurt based sauce is not really Paleo is it? My version of lamb wraps will give you all the satisfaction of a traditional gyro but none of the guilt.

This has to be one of my all time, favorite breakfast dishes. So on Easter Sunday, I decided to make it for me and my girlfriend. Earlier, I wrote a poached eggs post (I finally figured out how to do it properly) so I knew this would be a great time to give a paleo benedict a shot. Prior to this, I had only made a hollandaise sauce once so that was the step that I was a little iffy about but in the end, it turned out great.
